We’re Veggin’

Didn’t blog this yet – I need to get in the habit of blogging here. There are just too many sites I post on, mainly Facebook. But anyway, we’re on Day 2 of eating vegetarian.
(Day 3 if shrimp is okay – that’s what we had for our “first” dinner – easing into it! We had homemade veggie fried rice and I recreated the Applebee’s spinach and shrimp salad with – oh yeah, I forgot – warm bacon vinaigrette – I guess we can’t count this meal after all!) We declared ourselves “veggies” this past weekend. So far so good. Last night I made pesto mashed potatoes (have walnuts in it – protein) and grilled garlic, basil, and parm summer squash, and spinach and tomato salad. Mmmmm. This was all yummy! Now tonight’s dinner was more “eh”. It was a cabbage, pinto bean, and stewed tomato concoction over brown rice. Again, it was “eh”. Anyway, it’s late so – more next time.
